Tower Sizes
The towers vary in size.
Selection is typically based on guest numbers. And appetite. The madeleines tend to disappear quickly.

Large
70cm (H) × 35cm (W)
Approximately 294 madeleines.
A taller structure.
Often selected for larger weddings and celebrations where scale is expected.
Base price $800.

Medium
60cm (H) × 22cm (W)
Approximately 144 madeleines.
More contained.
Suitable for smaller gatherings, or when part of a wider arrangement.
Base price $550.

Add-on: Small
Available only alongside a large tower.
Not offered independently, or with a medium.
A smaller structure designed to extend the overall composition. Often used to create a more expansive setting, or to distribute madeleines across multiple tables.

A considered selection of eight.
Chosen for balance, consistency, and how they perform in structure.
Specific preferences are accommodated when possible. They can be discussed.




Crème Pâtissière (custard)
Silky, vanilla-forward, and restrained.
A familiar standard.
Lemon Curd
Bright, sharp, and balanced with sweetness.
Direct, without excess.
Passionfruit Crème
Tart, tropical, and smooth.
Noticeable, but controlled.
Chocolate Ganache
Dark chocolate, dense and deliberate.
Difficult to overlook.
Pistachio
Subtle, nutty, and rounded.
Less obvious, but persistent.
Tiramisu Crème
Coffee and mascarpone.
A trace of cocoa follows.
Raspberry
Clean, sweet, and slightly sharp.
Consistently chosen.
Fig & Almond (unfilled)
Fragrant and understated.
Left as is, intentionally.
Chocolate Coating
Each madeleine can be finished in dark, milk, caramel, white, or a custom colour.
Selected to suit the overall palette.
From softer tones to deeper finishes.
Applied carefully so the result is considered, both visually and in taste.

Styling
Fresh flowers can be added to each tower.
Selections are made to suit the occasion. Preferences are noted.
Specific varieties can be requested. They are sourced where possible. Adjustments to pricing tend to follow.
The towers can also be left undecorated.
Nothing is lost.

Some practical. Some expected.

Dual-flavour towers
Large towers can be composed with two flavours.
Approximately 294 madeleines in total. Divided between flavours, as evenly as possible.
The madeleine flavours are alternated during assembly. Not perfectly, some rows resist symmetry.
Medium towers and small add-ons remain single flavour.
An additional flavour is $100.

Extra madeleines
Additional madeleines can be prepared separately.
Presented on trays, for service. Or set aside for later.
They are often included for goodie bags. Or kept back, with intention.
Quantities can be adjusted. So can the cost.

Custom colour or flavour
Variations are possible.
Flavours can be adjusted where feasible. Requests are reviewed before being confirmed.
Colour can be customised using chocolate finishes. Usually matched to a specific palette.
Exact matches are attempted. Minor variations are not uncommon.
Logistics
Because our madeleine towers are quite delicate, they always need to be assembled on-site, as transporting them fully built can cause damage. This usually takes between two and three hours, depending on tower size.
Once in position, the tower should be kept in a cooler setting. The chocolate coating prefers it, warmer conditions tend to be less cooperative.
If anything remains, the madeleines can be stored for up to four days in the fridge. Or longer, if frozen in an air-tight container. They are usually eaten sooner.
